Led by President Kansuke Yamamoto, the brewery aims to produce sake cherished by the local community while upholding traditional methods. They place significant emphasis on environmental sustainability, implementing practices such as paper mulch cultivation and utilizing organic fertilizers made from their own sake lees. In collaboration with local farmers, they use contract-grown rice cultivated with organic fertilizers and brew their sake with the pristine underground water from the Shimanto River. Their flagship sake, "Mutemuka," embodies the philosophy of "not being obsessed with titles, remaining unadorned, and valuing a humble heart," reflecting their dedication to crafting excellent sake without being swayed by fame or status.
