Aichi Prefecture, with its abundant, pristine water from the Kiso Three Rivers and rice cultivation in the Nōbi Plain, has long been a thriving region for sake brewing. Located in Aisai City, Aoki Shuzo is a family-run brewery led by head brewer Takuma Aoki, committed to crafting "rich and flavorful sake" through traditional methods. Specializing in yamahai and kimoto brewing techniques, they use only naturally occurring brewery yeasts (kura-tsuki kobo). By allowing complete fermentation, their sake achieves a clean and crisp finish. Aoki Shuzo is the only brewery in Aichi Prefecture that forgoes the addition of cultivated yeast, staying true to its natural brewing philosophy.
