Founded in 1902 (Meiji 35), Tohoku Izumi Brewery is located in Fukura, a port town in Yuza, north of Sakata City in Yamagata Prefecture, facing the Sea of Japan. They use pristine spring water from Mount Chokai, one of Yamagata’s most iconic mountains, and focus on brewing premium sake, particularly tokutei meisho-shu (special designation sake). Tohoku Izumi was one of the first breweries in Japan to commercially release a ginjo-style sake, known at the time as “daiginjo.” Today, the brewery continues to specialize in junmai and junmai ginjo, developing distinct flavor and aroma profiles for each label to meet a wide range of consumer preferences. The brewery is also deeply committed to the study of sake aging. The president himself leads research into various aging techniques, exploring differences by method, sake type, and maturation period, in pursuit of expanding the potential of aged sake.
