This Junmai Daiginjo is brewed with Yamada Nishiki, known as the “king of sake rice.” This version is pasteurized once (hi-ire), bringing a calmer and more refined character while keeping the rice’s natural clarity and crispness, along with the brewery’s signature fruity ginjo aroma. They recommend starting with it chilled. As the temperature rises toward room temperature, the flavor becomes richer and more layered. It can be enjoyed across a wide range of temperatures.

Dainagawa is a renowned sake brewery located in Omori Town, Yokote City, Akita Prefecture, a region famous for heavy snowfall and the important intangible cultural heritage site, Shimotsuki Kagura no Sato. Founded in 1914, Dainagawa has long been loved as a local sake of Yokote. The brewery operates with a small, skilled team of five, led by master brewer Yoshinao Sato, who follows the Yamauchi Toji tradition. Their philosophy is to craft sake that not only intoxicates but also touches the heart. Using the traditional cold-weather brewing methods passed down through generations and pristine water from the Dewa Hills, Dainagawa sake is known for its soft, full-bodied character. Today, all of their sake is made with 100% Junmai, focusing on improving both quality and flavor.
