This brewery was founded in the late Edo period and has continued its sake brewing tradition for over 200 years. Utilizing the pristine waters of Hida, high-quality local rice, and the harsh winter climate, it follows the "Hida-style cold winter brewing" method to craft sake that is both rich and refined, with a clean, crisp finish. While preserving traditional techniques, the brewery also explores the endless possibilities of sake by experimenting with hana-kobo—a natural flower yeast—to develop new and distinctive flavors. Guided by the belief that “a good sake makes life richer,” they pursue excellence by combining various polishing ratios, brewing processes, and yeast types to create unique, character-filled sake. In addition, they produce liqueurs made from local sake that are especially popular among women.
