Akita Homare Brewery was established in 1944 through the merger of several breweries, with roots dating back to the late Edo and early Meiji periods. Striving to create a sake that represents the pride of Akita, the brewery focuses on producing crisp, dry sake and was an early adopter of junmai and ginjo sake production. While respecting tradition, the brewery also embraces modern tastes, offering sake and shochu suited to contemporary preferences. The brewing water comes from the underground streams of Mount Chokai, and a variety of yeasts, including Akita Flower Yeast (AK-1), are carefully selected to craft aromatic and smooth-tasting sake.
