Shirakiku Shuzo is a sake brewery located in the Naka-West region of Okayama Prefecture, in the town of Nariwa, Takahashi City, where the Kibi Highlands stretch out. As an Okayama brewery, we believe that the true essence of local sake is crafted through the perfect harmony of local rice, water, and traditional brewing techniques. We use only rice grown in Okayama Prefecture, and our brewing water comes from the underground springs of the Nariwa River, which is part of the Takahashi River system, one of the three major rivers of the region. Additionally, we rely on the time-honored skills of the Bitchu Toji (master brewers) who have over 100 years of tradition. With the best possible environment, we continue to brew sake that reflects the richness of Okayama’s natural surroundings. Our sake is characterized by a fragrant aroma, a smooth texture, and a balanced, clean finish, allowing the umami of the rice to shine through.
