Founded in 1685, this brewery has carried on its tradition, crafting sake in Hirosaki for generations. The current 9th-generation president, Yozo Tamada, is also a toji (master brewer) actively involved in the brewing process. Their flagship sake, Tsugaru Jongara, is well-known, alongside the aromatic and elegant Hanaippu and Zan, a sake designed with a neutral and simple flavor to complement the evolving Japanese dining scene.
