This brew from Ookura is called “Uno” representing the process of “Ichidan Shikomi” or “One addition” used to start the fermentation. Unpasteurized and bottle aged from 2019 producing notes of molasses. The palate is “ama-suppai” or sweet&sour with very strong umami and acidity. Will overpower delicate foods, but will go well with many different cuisines since it is high in acidity. Taste includes yellow raisins, citrus, red grapes, and caramelized figs. It reminds me of roasted pineapple.
