This “88” Junmai is made from 100% Ippon-jime rice and it’s milled to 88% to retain robust, full flavors rarely found in conventional sake that are milled more extensively for “refined flavors”. A touch lactic and full-bodied, this is sake meant for rich cuisine, like Japanese beef and potato stew (nikujaga), yakitori, grilled seafood, gyoza, or kimchi hot pot. It is better at room temperature than cold, or it tastes amazing when warmed.

The company is located at the foot of the Echigo Mountains and has access to abundant groundwater. In addition to water quality, climate is also important for sake brewing. The company takes advantage of the natural water quality and climate for sake brewing. We conduct all processes from rice cultivation to rice milling in our rice paddies.
