Watanabe Sahei Shoten, founded in 1842, is located in Nikko City, Tochigi Prefecture. Its signature brand, Nikko Homare, is brewed using the pure, clean spring water from the foothills of Mount Nikko and takes full advantage of the region’s cold winters. Believing that “junmai sake is the true local sake,” the brewery dedicates about 90% of its production to junmai-style brews. The brewers, led by an experienced toji (master brewer), uphold traditional methods while carefully selecting high-quality sake rice and soft spring water from the Otani River to craft authentic, local sake that reflects the spirit of the region.
