This sake brewery is located directly across from the Kasama Inari Shrine, one of Japan’s three major Inari shrines. The brewery has a long history of being directly run by the local feudal clan. They continue to produce the sacred sake "Niha-yama Matsushiro." The water used for brewing comes from the underground springs of Mount Sashiro. The sake is made using traditional methods, and it balances five flavors: sweet, salty, sour, bitter, and astringent. It’s a popular souvenir from Kasama, made with high-quality rice and water. The sake is brewed by hand, allowing for delicate adjustments that machines can't replicate. The brewery focuses on producing small batches of various types of sake.
