With a history spanning over a century, situated in the Kaga region, Nishide Shuzo follows the principle that 'sake brewing is our life.' Discovered a century ago, the yeast known as kuratsuki kobo is exceptionally distinct, as it naturally resides within the brewery, making it exclusive to Nishide's sakes. This Junmai Daiginjo presents notes of apricot and ripe banana at the forefront, starting with a gentle and mild taste that transitions into the smooth umami of sake rice, concluding with a dry finish and balanced acidity.
