It undergoes no filtration and is carefully aged to develop its flavor. The final step involves maturing the sake in a unique "Kōtsuki barrel" made from a special part of cedar wood, where the white outer layer and red inner layer meet. This process gives the sake its traditional, golden-yellow color. The result is a well-balanced dry sake with rich umami, smooth acidity, and amino acids, creating a crisp finish. The barrel adds a distinctive fragrance, perfectly complementing the unfiltered, full-bodied flavor. Enjoy it chilled, at room temperature, or warm, but it is especially recommended at room temperature to savor the full character and aroma of the barrel.
