The name combines the crane—a symbol of longevity said to live a thousand years—with Kyoto, a city with over a thousand years of history. It reflects the brewery’s wish to craft sake that will be cherished for generations to come. They use pure spring water from the Momoyama hills, famously known as “Miyamizu of Fushimi.” Thanks to small-batch brewing in their modest-sized brewery, their sake features a refined balance of soft umami and elegant ginjo aroma—a truly graceful expression of Kyoto-style sake.
