Takeshige Honke Brewery is a historic sake brewery founded in 1868, located in Motai-juku, a former post town along the old Nakasendo highway in Saku City, Nagano Prefecture. The brewery buildings are designated as Registered Tangible Cultural Properties of Japan, and the brewery continues to uphold the traditional kimoto brewing method today. By harnessing naturally occurring lactic acid bacteria and allowing fermentation to proceed slowly over time, their sake develops a deep, layered expression of rice umami. Known for its versatility, the sake can be enjoyed both chilled and gently warmed. While firmly rooted in tradition, the brewery also explores a wide range of expressions, including aged sake and doburoku. Its representative labels include Bokusui and Misonotake.
