Continuing the journey from previous Assemblages, IWA 5 Assemblage 4 reaches its pinnacle at our Kura in Toyama, Japan. It is a new brewery opened in 2021, located in Shiraiwa, Tateyama Town, Toyama Prefecture. The founder is Richard Joffrois. Born in the Champagne region of France, he is the fifth generation Chief Brewer of Dom Pérignon. The traditional wine-making technique known as "assemblage" has been incorporated into sake. As the name implies, assemblage means "to combine," and by combining multiple sake rice, yeast, and other ingredients in the brewing process, a complex yet harmonious flavor can be enjoyed. The company is taking a new step forward in the history of sake, constantly evolving to achieve a better tuning.
