“Yahiko Aikoku” is a limited-edition junmai ginjo sake made entirely with ingredients from Yahiko Village. It uses a rare heirloom rice called Aikoku, a historic variety from the Meiji era, cultivated with reduced pesticides and no chemical fertilizers. The yeast is also unique—sourced and cultivated from a cherry blossom tree found only at the summit of Mt. Yahiko. This sake is the result of a local project that brings together farmers, brewers, artists, and community members, with the goal of creating a sake that is 100% made in Yahiko—from rice to water, brewing to the washi label hand-painted by a local calligrapher. Brewed with care to highlight the true character of Aikoku rice, it offers a rich, full-bodied flavor with a distinctive acidity and a clean, dry finish. Each bottle reflects the personality of the year’s harvest, making it a sake you can enjoy anew every season. This bottle is not just sake—it’s a tribute to the land, tradition, and people of Yahiko.

Founded in 1838, Yahiko Brewery is a historic brewery known for developing its own brewing method called the “Izumi-ryu style,” and for training many skilled brewers over the years. Brewery owner Mr. Oi believes that sake should bring comfort and quietly enhance the dining experience—not overpower it. He often says, “We make sake that plays a supporting role, like a best supporting actor.” While premium sake like junmai daiginjo often gets the spotlight, Mr. Oi places the highest importance on regular table sake. At Yahiko Brewery, even the standard sake is brewed with great care, using dedicated tanks typically reserved for high-end labels. He believes that affordable sake should never mean lower quality, and that the quality of regular sake reflects the true heart of a brewery.
