This Junmai Daiginjo is crafted exclusively from Yamada Nishiki grown in the prestigious Kamitōjō district of Hyogo’s Special A area, known for over a century as Japan’s “Grand Cru” for sake rice. No brewing technique can surpass the quality of its raw materials, which is why the focus here is on the soil. Over countless ages, the land has developed its unique character, and this deep soil history directly shapes the rice.
