To create a sake with a gentle character and depth that pairs well with food, the brewery carefully handled each ingredient. Through a long, low-temperature fermentation process, their “Green Label” was born. For the final step, the sake is poured into cloth bags, rinsed with pure water, and gently pressed using the traditional fune-shibori method. It features a soft ginjo aroma and a bright acidity, making it an excellent choice to enjoy alongside meals.

Located in Saijo, Ehime Prefecture—a city renowned for its pristine water—the brewery benefits from the region's famous underground springs, known as 'Uchinuki,' which have been celebrated since the Edo period. The same pure waters from the Ishizuchi mountain range serve as the foundation for crafting our sake, ensuring a brew that reflects the natural purity of its origins.
