The 'Echigo Takayanagi' brand, made exclusively by Ishizuka Shuzo, uses only rice grown in Takayanagi, Kashiwazaki. The brewery’s hallmark mochigome yondan shikomi (four-step sticky rice brewing) creates a sake with a soft sweetness that doesn’t linger on the palate, making it ideal as a food pairing sake. With a clean finish and a hint of fruity ginjo aroma (melon-like), it pairs exceptionally well with dishes that highlight natural flavors, such as wild vegetable tempura or lightly fried seafood like shrimp, crab, and small river crabs.

Ishizuka Sake Brewery is a small sake brewery located in the former Takayanagi Town, about 20 kilometers from Kashiwazaki toward Tokamachi City. Blessed with an ideal natural environment for sake brewing, it benefits from the clear air and snowmelt water brought by the snow, as well as stable temperatures and humidity during the brewing season. The brewery uses excellent rice grown in terraced fields, nourished by water from the beech forests of Mount Kurohime. They strive to craft sake that only a small brewery can achieve.
