This Junmai sake is crafted from Takane-Nishiki, a signature rice of Nagano Prefecture. The rice is polished using the traditional Henpei method, which carefully removes unwanted layers while preserving as much of the starchy core as possible. Though time-consuming, this technique yields a sake with a rich yet clear flavor full of umami. Expect notes of marzipan, plantain, and fresh palm leaves. When served chilled, it offers crisp acidity and a refreshing finish. When gently warmed, it truly shines—softening the acidity, adding weight to the palate, and revealing layered notes of cereal grains and dried longan.

As the sole sake brewery in the Minami-Shinshu Shimoina region, it is located in Iida, a historic castle town overlooking the Southern Alps. The region once hosted 37 breweries, but during World War II in 1944, many were merged under corporate consolidation. This brewery is one of the rare examples in Japan to remain intact in its consolidated form. The sake brand name “Kikusui” was inherited by consensus from the local brewers who had been using this historic name since the Meiji era, and continues to be cherished to this day.
