Available only in the summer, "Natsushika" is a seasonal delight. It's a Junmai Ginjo sake crafted with the meticulous care usually reserved for Daiginjo brewing, using proprietary yeast cultured by the brewery and fermented at low temperatures. To maximize its appeal, the sake is left unprocessed after pressing and then individually bottle-aged with meticulous attention to detail. The result is a refreshing sake with the elegant Ginjo aroma typical of Shunka, along with the soft umami of rice. It pairs wonderfully with dishes featuring aromatic ingredients or those with a touch of sweetness.
