“Hon KID” is crafted with a lower alcohol content to bring out the softness and clarity characteristic of KID, as well as the pure quality of Wakayama’s natural water. Using a blend of Yeast No.1801 and No.901, the brewers carefully adjusted the balance, reducing the proportion of No.1801 to subtly restrain the aroma. The result is a sake with a graceful, refined fragrance typical of a Junmai Daiginjo, complemented by a gentle sweetness and a clean, elegant acidity. Thanks to its lower alcohol content, this sake offers a smooth and refreshing drinking experience that can be enjoyed on a wide range of occasions.

Founded in 1928, this sake brewery in Kainan City, Wakayama Prefecture, was named "Heiwa Shuzo" after the war, symbolizing the joy of being able to make sake in a peaceful era. They grow their own sake rice, Nanko plums (used for plum wine), and yuzu fruit, and despite the increasing automation in sake brewing, most of the work is done by hand. Sake is like a living thing, and only by making it carefully by hand, adapting to changes, and putting heart into the process, can they create a unique flavor. With the goal of delivering delicious sake to Japan, overseas, and especially to young people, a passionate team of young brewers, with an average age of 31, continues to take on new challenges every day.
