The nose on this new to the US unpasteurized brew is a cool collection of strawberry, pear, watermelon, honeydew, floral, and sweet rice aromas. Yes! An excellent new addition to the Nama market that is bright, fresh, juicy, and tingly with a clean and crisp finish. Get your flavor scorecard out and start checking off these boxes for peach, tangerine, crisp apple, young pear, grapefruit, persimmon, and cranberries. A larger glass brings forth more acidity and makes it fun and frisky and appealing to white wine drinkers. A very fun Nama that is flavorful and fresh that is joyous with good fruit tones and a quick crisp finish. It’s name is “Spring Breeze” and that’s how this cool brew drinks. Wakayama

Founded in 1928, this sake brewery in Kainan City, Wakayama Prefecture, was named "Heiwa Shuzo" after the war, symbolizing the joy of being able to make sake in a peaceful era. They grow their own sake rice, Nanko plums (used for plum wine), and yuzu fruit, and despite the increasing automation in sake brewing, most of the work is done by hand. Sake is like a living thing, and only by making it carefully by hand, adapting to changes, and putting heart into the process, can they create a unique flavor. With the goal of delivering delicious sake to Japan, overseas, and especially to young people, a passionate team of young brewers, with an average age of 31, continues to take on new challenges every day.
