This sake is a signature product of Shosetsu, made with carefully polished "Ginginga" rice from Iwate Prefecture, milled to 50%. It’s bottled as a nama sake (unpasteurized) and then gently pasteurized using an automated pasteurizer. In this process, the sake is conveyed on a belt and showered with hot water, allowing for controlled heating. This method helps to preserve the aroma and flavor without causing evaporation or changes in taste. You'll also enjoy its freshness since it’s a nama zume (bottled unpasteurized). Be sure not to overchill it to fully appreciate its delicate characteristics!​​​​​​

Kanzawagawa Brewery traces its origins back 100 years. In 1912, the Mochizuki family, who were originally engaged in forestry and sericulture in the mountains far north of their current location, founded the brewery. When they decided to start brewing sake, they sought a place with excellent water quality and eventually established their brewery at its present location. The brewery took its name, "Kanzawagawa," from the water source they use for brewing.
