Nakano Brewery Company (Chiebijin)

Nakano Brewery Company (Chiebijin)

Oita

Nakano Brewery, established in 1874 in Kitsuki City, Oita Prefecture, focuses primarily on sake production and also crafts liqueurs using local black tea leaves. Their flagship brand, "Chiebijin," is named after the founding proprietress, Chie. Within the brewery, Mozart's classical music is played during fermentation, a unique method believed to influence the brewing process. Emphasizing the importance of water, rice, and the brewer's spirit in sake-making, they utilize high-quality natural water drawn from 200 meters underground and primarily source local rice, promoting a philosophy of local production for local consumption.
