Their flagship brand, "Chiebijin," is named after the founding proprietress, Chie. Within the brewery, Mozart's classical music is played during fermentation, a unique method believed to influence the brewing process. Emphasizing the importance of water, rice, and the brewer's spirit in sake-making, they utilize high-quality natural water drawn from 200 meters underground and primarily source local rice, promoting a philosophy of local production for local consumption.
