This Junmai Ginjo sake is crafted using the newly discovered Tokyo yeast, which was extracted from bees gathering nectar in the flowerbeds of Hibiya Park just four years ago. The sake is made with Tokyo-grown rice, primarily the Kinu-Hikari variety—a rice similar to Koshihikari, making it suitable for sake brewing. Despite being produced in the Tama region, this rice is rare due to its low yield. The result is a sake with a clean finish and a well-balanced harmony of sweetness and acidity.
