This is an exceptionally rare Daiginjo sake, crafted by placing the moromi (fermented mash) into cloth bags and letting the sake slowly drip out through natural gravity, with the precious drops collected in special tobin bottles. Produced in very limited quantities, this sake is often entered into competitions, making it a true treasure of the brewery. It features a rounded flavor with a floral ginjo aroma, and pairs perfectly with sashimi and other seafood dishes. Best enjoyed chilled.

Founded in 1875 in Shintomicho, Kawagoe City, Kagamiyama Brewery produced a beloved local sake enjoyed by many. However, in September 2000, it sadly closed its doors, ending a long history. Six years later, in 2007, driven by the passionate calls from local government and citizens for its revival, a new company, Koedo Kagamiyama Brewery Co., Ltd., was established in Nakacho, Kawagoe City. Kagamiyama is now dedicated to refining and producing the iconic Kagamiyama sake as a cherished local brew.
