Yamahai is a timeless classic from Hyogo prefecture, brewed with utmost care by Miyakobijin Brewery. Its polish ratio of 70 allows for a bold flavor profile, while its acidity of 1.5 delivers a pleasantly tart edge. An SMV of 2 provides a hint of sweetness, like a gentle whisper of honey. Combining the full-bodied character of the 'Gohyakumangoku' rice, this sake is a dance of complexity and harmony on your palate. Best paired with richly flavored dishes like grilled meats or savory stews to complement its robust flavor. You are in for a true traditional sake experience.

Miyako Bijin Brewery Company

Hyogo

In 1945, ten breweries from southern Awaji Island united with a shared vision. In an environment blessed with the bounty of the Seto Inland Sea and surrounding mountains, they preserve the traditional Yamahai brewing method while also using the faster brewing method. This combination creates a unique, rich flavor. They are also one of the few breweries in the country that use the 'tenbin-shibori' method, a traditional technique that uses leverage to press the sake over several days. The carefully crafted sake produced through this method is highly regarded in national sake competitions.
