Joto Umeshu is handcrafted by Fuji Brewery in Shimane, Japan, using time-honored techniques and the finest ingredients. Established in 1939, the Fuji Shuzo, located in the town of Izumo, has been run by the Imaoka family for three generations. Izumo is known for its ancient shrine, Izumo Taisha, which dates back to the 8th century and is considered Japan's oldest and most important shrine. Honoring both the shrine and Mt. Fuji, Japan's beloved symbol, Izumo Fuji sake gets its name. The Imaoka family adheres to traditional brewing methods, avoiding modern machinery. Every step, from steaming with traditional Japanese steamers to koji production and pressing with wooden vats, is meticulously done by hand, preserving the art of traditional sake brewing.
