Tago Honke Sake Brewery was founded in Tsuyama City, Okayama Prefecture, during the early Edo period (1661–1673). Its beloved local sake, Kamoitsuha, has been cherished for generations. The brewery uses pristine underground water sourced from the Kamo River, which flows from the foothills of Mt. Nagi in the Chūgoku Mountains. Selected as one of "Okayama’s 37 Clear Streams," this water has a hardness level of 70, making it ideal for sake brewing. The rice is carefully cultivated by local contract farmers, primarily using Nihonbare and top-grade Hyogo-grown Yamadanishiki, ensuring high-quality sake production.
