Ginshari Tokubetsujunmai is a Kyoto gem, polished to 60%, revealing layers of flavor and a rounded balance. With an acidity of 1.8, expect a slight tang to tempt the palate while the smv of 3 suggests a delightfully off-dry finish. Prepared with Sasanishiki rice, this sake hints of ripe fruits and a faint trace of earthy nuts. A great companion to a warm, hearty meal or simply enjoyed standalone. Crafted meticulously by Shirasugi Brewery, 'Ginshari' reflects the passion and expertise in every sip. Enjoy it slowly and savor the art in your glass.

Hakusugi Brewery Company

Kyoto

Founded in 1777, Shirasugi Brewery is one of the few breweries in Japan that brews sake exclusively using locally grown table rice, not sake rice. With the motto, “Delicious rice makes delicious sake,” the brewery works closely with a new generation of local farmers to grow flavorful rice that forms the foundation of their sake. They use ultra-soft water from a spring behind the brewery, resulting in a gentle mouthfeel and a pleasant acidity that naturally comes from the rice. Their flagship label, Shirakiku, is brewed using 100% premium Koshihikari rice grown in the Tango region. They also experiment with other flavorful varieties like Sasanishiki—rice that’s delicious to eat, and just as delicious to drink.
