Founded in 1777, Shirasugi Brewery is one of the few breweries in Japan that brews sake exclusively using locally grown table rice, not sake rice. With the motto, “Delicious rice makes delicious sake,” the brewery works closely with a new generation of local farmers to grow flavorful rice that forms the foundation of their sake. They use ultra-soft water from a spring behind the brewery, resulting in a gentle mouthfeel and a pleasant acidity that naturally comes from the rice. Their flagship label, Shirakiku, is brewed using 100% premium Koshihikari rice grown in the Tango region. They also experiment with other flavorful varieties like Sasanishiki—rice that’s delicious to eat, and just as delicious to drink.
