Junmai is available in Japan, but Daiginjo is a valuable sake from Yoshida Shuzo that is made exclusively for the American market. This elegant sake offers a clean, balanced taste highlighted by a bold hint of wild honey. Its pronounced aroma weaves together cardamom, cinnamon, and stewed apple, which seamlessly integrate into its flavor. Despite a slightly higher alcohol content, its smoothness masks the strength, making it very enjoyable.

Yoshida Brewery Company(Tedorigawa)

Ishikawa

Founded in 1870 (Meiji 3), our brewery is located near the center of the Tedori River alluvial fan, with a clear view of the sacred Mt. Hakusan. We brew sake using the pure air and pristine water of this environment. For brewing water, we use the underground water of the Tedori River. We carry on the tradition of Tedori sake, nurtured by the local climate and culture, aiming to create high-quality, refined sake that satisfies our customers and brings happiness to our employees and their families. Currently, 70% of the rice used at Yoshida Sake Brewery is sourced locally from Hakusan. Our goal is to craft sake that can only be made here—expressing the unique character of Hakusan City in Ishikawa Prefecture. They say, “By focusing on local ingredients, we create a cycle within the region and shorten logistics distances. When retailers, restaurants, and consumers become aware of the importance of protecting the local environment, environmentally friendly actions spread, leading to a more sustainable society.”
