The neo series is created entirely by the brewery’s staff—from concept to brewing to label design. This year’s release was crafted by Ms. Kodama, who left a different profession after 28 years and moved from Tokyo to Ishikawa three years ago to join the brewery. Using mineral-rich “100-Year Water” flowing from sacred Mt. Hakusan and the traditional Noto Toji yamahai method, he brewed this sake with Omachi rice. The result is a clean, refreshing style with low alcohol and a light natural sparkle—very much in the Yoshida Shuzo tradition. Despite its smooth drinkability, it still showcases Omachi’s signature rice sweetness and long-lasting finish. It pairs especially well with dishes that have a hint of spice—like cinnamon-accented foods—or with olive-oil-based plates such as carpaccio. Chill well before serving and enjoy in your favorite glass or cup.

Ishikawa

Founded in 1870 (Meiji 3), our brewery is located near the center of the Tedori River alluvial fan, with a clear view of the sacred Mt. Hakusan. We brew sake using the pure air and pristine water of this environment. For brewing water, we use the underground water of the Tedori River. We carry on the tradition of Tedori sake, nurtured by the local climate and culture, aiming to create high-quality, refined sake that satisfies our customers and brings happiness to our employees and their families. Currently, 70% of the rice used at Yoshida Sake Brewery is sourced locally from Hakusan. Our goal is to craft sake that can only be made here—expressing the unique character of Hakusan City in Ishikawa Prefecture. They say, “By focusing on local ingredients, we create a cycle within the region and shorten logistics distances. When retailers, restaurants, and consumers become aware of the importance of protecting the local environment, environmentally friendly actions spread, leading to a more sustainable society.”
