The special junmai sake is brewed slowly at low temperature fermentation, bottled without filtration, and then fired and cooled rapidly so as not to spoil the aroma. When poured into a glass, the core aroma rises gently, and the umami of the rice spreads slowly in the mouth. The acidity is low, and the spread of umami in the mouth gradually coalesces as it passes down the throat. We recommend this special junmai as a food sake.

Fuchu Homare Brewery Company

Ibaraki

Our brewery was established in 1854 in Fuchu, located in the heart of Ibaraki. The current seventh-generation brewer has been dedicated to reviving the legendary sake rice strain 'Wataribune,' which had become extinct in the early Showa period. With the help of local farmers, cultivation began from the few remaining seeds. This passion for sake-making led to the creation of the brand 'Wataribune,' whose Daiginjo won a gold medal at the National New Sake Competition in 1996. Today, we continue our relentless pursuit of crafting excellent sake.
