Crafted by renowned Kamoizumi Sake Brewery, this Hiroshima-made Junmai Daiginjo is an unfiltered, unpasteurized sake with a polish ratio of 50%. It's expertly made from Yamadanishiki rice, the King of Sake rice, and has a gentle sweetness (SMV: 1) that is just enough to tease your palate without overwhelming it. Founded in 1912 as Maegaki Sake Brewery, Kamoizumi Brewery has been crafting sake under the "Kamoizumi" brand. In the mid-1960s, the second-generation brewer aimed to revive traditional sake brewing, using only rice and rice koji. After much trial and error, they released "Honjikomi Kamoizumi" in 1972, becoming pioneers of junmai brewing. Since then, the brewery has dedicated itself to advancing junmai brewing across Japan and supporting the local sake industry in Saijo.
