Hyogo

Chikusen is a sake series inspired by the five natural elements—Sky, Wind, Fire, Water, and Earth—each reflecting a different expression of nature. Among them, the signature aged sake “Chikusen” is known for its golden hue and deep, mellow flavor, achieved through slow fermentation at low temperatures during the harsh winters of the Tajima region in Hyogo Prefecture. The traditional sandanjikomi (three-step brewing) method is carefully followed. Brewed by Tajime Gomei Company, founded in 1702 and based in Asago City, Hyogo, Chikusen is crafted under the belief that “one grain of rice holds infinite potential.” The brewery aims to create sake full of umami and acidity—so delicious, you'll want to enjoy it today, tomorrow, and the day after. All sake in the series is made exclusively with Hyogo-grown rice and pristine spring water drawn from the Takenokawa River.
