This Junmai Ginjo AKABU uses sake rice "Gin ginga", which is made in Iwate prefecture. It has an elegant and fruity taste like green apples, and you can enjoy its round umami and rich flavor. It matches perfectly with marinated octopus with herb flavor, Vietnamese fresh spring roll, sliced white-fleshed raw fish. It is recommended to serve it chilled with wide wine glass, such as Burgundy wine glass.

Founded in 1896, Akabu Sake Brewery is located in Otsuchi, Iwate Prefecture. The brewery was devastated in the 2011 earthquake and tsunami but reestablished itself with a new facility in Kitaiioka, Morioka, in 2013. Today, a young generation of brewers is leading the revival of this historic brewery. With the aspiration to create a sake that represents Japan, the "AKABU" label was introduced in 2014. The head brewer, Ryunosuke Furudate, the sixth-generation heir, is dedicated to preserving traditional sake craftsmanship while embracing the vision of a new era.
