Shimazaki Brewery is founded in 1849 in Nasu-Karasuyama City, located in the midstream area of the Naka River, which originates from Mount Nasu in northeastern Tochigi Prefecture. Blessed with abundant nature, the brewery has been crafting sake with great care for over 170 years. The brand name "Azumarikishi" was chosen by the second-generation brewer, Kumakichi, who was a passionate sumo fan. He named the sake with the wish that it would be “as strong and unbeatable as a sumo wrestler in the ring.” Since then, the brewery has continued to produce full-bodied, rich-tasting sake that brings out the deep flavor of the rice. In addition, since 1970, the brewery has been committed to the long-term aging of sake, storing a vintage daiginjo every year without fail. They use a unique natural cave—originally built as an underground factory for tank production during the final stages of World War II—as their aging cellar. This exceptional storage environment enables them to explore new expressions of aged sake.
