Enjoy the deep and mellow flavor of this Junmai Ginjo from Tochigi! You'll love its rich taste from rice polished to 55%, hinting at nuts and ripe fruits. Its acidity of 1.8 lends a rounded, full-bodied feel, while the SMV of 1 balances sweetness with umami. The 'muroka nama genshu' method expresses the raw, vibrant spirit of this sake - unfiltered, unpasteurized, and full-strength. Pairs wonderfully with grilled chicken or rich seafood. Delight in the artistry of Shimazaki Sake Brewery, crafting exemplary sakes like this for decades.

Shimazaki Brewery Company

Shimazaki Brewery Company

Tochigi

Shimazaki Brewery is founded in 1849 in Nasu-Karasuyama City, located in the midstream area of the Naka River, which originates from Mount Nasu in northeastern Tochigi Prefecture. Blessed with abundant nature, the brewery has been crafting sake with great care for over 170 years. The brand name "Azumarikishi" was chosen by the second-generation brewer, Kumakichi, who was a passionate sumo fan. He named the sake with the wish that it would be “as strong and unbeatable as a sumo wrestler in the ring.” Since then, the brewery has continued to produce full-bodied, rich-tasting sake that brings out the deep flavor of the rice. In addition, since 1970, the brewery has been committed to the long-term aging of sake, storing a vintage daiginjo every year without fail. They use a unique natural cave—originally built as an underground factory for tank production during the final stages of World War II—as their aging cellar. This exceptional storage environment enables them to explore new expressions of aged sake.
