“DATE SEVEN” is an ultra-limited sake collaboratively brewed by seven prestigious breweries in Miyagi Prefecture. For the 2025 release (SEASON 2 Episode 4), the lead breweries are Urakasumi and Hakurakusei. This bottle represents the “Urakasumi Style – Sea Bottle.” It is made from Hyogo-grown Special Grade Yamada Nishiki polished to 48%, with the polishing process carried out jointly by all seven breweries. Using both Miyagi yeast and Association No.12 yeast, Urakasumi applied its traditional brewing techniques to craft this Junmai Daiginjo sake. The result is a sake with a refined, elegant aroma that is expressive yet never overpowering, and a beautifully balanced combination of gentle sweetness and refreshing acidity.
