Murayu Brewery was founded in 1948 in Kosudo, Niigata City. It has continued to produce the brand name “Hanakoshiji,” but in 2002, Kensuke Murayama, the third generation representative director of the company, created “Murayu” with a completely different flavor to overturn the stereotypical image of Niigata sake as light and dry. Although only less than 40 koku of the total production is made of this sake, it is a remarkable sake whose aroma has great potential to become a new popular brand in Niigata.
