This Junmai sake is brewed with Yume no Kaori, a sake rice grown in Aizu. For the summer edition, it undergoes bin-kan hiire (bottle pasteurization), ensuring stability while preserving the signature character of the “Kai” series. Located in the small town of Aizumisato, with a population of about 20,000, Oyama Sake Brewery was founded in 1865. Known for its flagship sake, 'Aizu Otokoyama,' the brewery once shipped its products throughout Fukushima and the Kanto region. However, due to declining sales, staff shortages, and the poor health of the sixth-generation brewmaster, the brewery went dormant in 1998 for nearly 20 years. The person who brought it back to life was Yasushi Kobayashi, the nephew of the seventh-generation brewmaster. With the pure, pristine nature of Aizu and traditional brewing techniques instilled in him, he pours his heart into every drop. Please enjoy this masterpiece.
