Kikusui Junmai Ginjo(Crystal Water) has a fruity aroma with hints of citrus and persimmon. Kikusui starts off smooth, gradually increasing in viscosity and ending with a slightly salty aftertaste. Dry, sharp, and smooth, this ginjo is mouth-filling and will win you over with its sweet fruity tones and dry finish. Kikusui is fermented at a lower temperature and for a longer time than other ginjo-shu, which removes the "heavy" character often associated with junmai-shu and gives it an overall lighter, drier face. Recommended for gin and vodka lovers.

Kikusui Brewery Company is a long-established sake brewery founded in 1881 in Shibata City, Niigata Prefecture. It began when the founder, Setsugorō Takazawa, established a brewery in the area. For over 140 years, the company has been engaged in the production and sale of Japanese sake. Its flagship products include Funaguchi Kikusui Ichiban Shibori and Kikusui no Karakuchi. In particular, Funaguchi Kikusui Ichiban Shibori is known as Japan’s first unpasteurized, undiluted sake (nama genshu) and currently accounts for about one-third of the company’s total sales. Kikusui develops products that respond to changing consumer preferences over time. While remaining deeply rooted in its local community, it also actively expands its presence overseas. The company has overcome hardships such as war and two major floods, continuing to pursue sake brewing that enriches everyday life.
