This Junmai Daiginjo is brewed from the rare rice varietal Aiyama, polished to 50%. Aiyama inherits its lineage from two legendary sake rices—Yamada Nishiki, known as the “King of Sake Rice,” and Omachi, Japan’s oldest heirloom rice. The grains are large and dissolve easily during fermentation, creating a sake rich with concentrated umami. Right after pressing, the sake is bottled at its freshest to preserve its vibrant character. It offers soft, concentrated sweetness and the elegant fragrance unique to Aiyama, along with the lively energy of unpasteurized (nama) sake. Since it is unfiltered, some bottles may contain natural rice sediment.
