Founded in 1902, Hananoka Brewery has been in operation since the Meiji era. They choose traditional 'Kimoto' brewing, use Edo Higo rice 'Homase,' and have revived 'Makou' (plowing with horses), a practice believed to have been common in Japan until around 1955. By incorporating these ancient cultures and techniques, they continue to produce sake with a deep respect for tradition.
