This sake is pressed in winter, then fire-pasteurized and bottled without filtration to preserve its fresh flavor. It is quickly chilled and stored for two summers in the brewery’s temperature-controlled cellar, allowing the taste to mature beautifully. Brewed with the brewery’s signature medium-hard water, this sake once had a bold and masculine character. However, after a year of additional aging, it has developed a smooth, rounded profile that fully brings out the potential of Taisho no Tsuru. Enjoy it slightly chilled or at room temperature, and experience a deeper richness when gently warmed to around 50–55°C.
